When creating forms you should be able to hide the answers from everyone other then HR super users. There are several fields such as SSN and Birthdate that HR needs to be able to view, but we wouldn't want the hiring officials to see. Right now if you select hide then no one can see it even HR, and if you unhide it everyone can see.

check permissions - you can actually hide some applicant profile fields using permissions
