I agree that Today's date makes a lot of sense, but may be a bit complicated when we take into account timezone differences as it is usually the server sending the email instead of a user.
It would be good to understand the use case of including todays date in an email when the email itself would have a received date against it when the candidate receives the email.
It would also be good to understand what sort of signature information you would be expecting? Communication templates can be configured with preset signatures in them, but I am assuming you are requesting that a per user signature be applied?
It would be ideal about merge field if we can add remove through settings our own version to use.
Thank you for you comment Mark but we have checked with our rep also. We do not have merge fields under communication to use for Today's date, apply signature etc. please share screen shots if possible so we can bring to our PageUp rep's attention.

emails templates are quite flexible
That being said I would appreciate any enhancements to merge fields
